Alexander Nikolayenko is one of the most famous chefs in Nizhny Novgorod, promoting Russian cuisine. He has been in the restaurant business since 1997. The chef uses long-forgotten local ingredients found in the Nizhny Novgorod woods: cones, leaves, moss, dried bees, among other things. He is always experimenting so he can impress his guests. In doing so, he is inspired by the recipes of old cookbooks from the late 19th and early 20th centuries. Alexander is a frequent guest at workshops and is a speaker at gastronomic festivals, and enjoys sharing his knowledge and skills.
