A young team from St. Petersburg opened a neo-bistro Trip with an ironic signboard «Another Fashionable Place» in the center of Kaliningrad a year ago. They hoped to attract urban pilgrims for tasty food, a «marshmallow» interior, and unhurried near-cultural conversations. Neobistro’s philosophy lies in broadcasting the author’s view of cooking simple dishes with a dash of innovation. Thanks to this, the establishment gained popularity and became one of the topmost visited in the region.
Neobistro Trip is the winner of the 2021 Pumpernickel Restaurant Awards in two categories: Discovery of the Year and Best Breakfast — we’re talking about chia pudding with banana, mango sauce, and kombucha on rooibos. In addition to quality products, they pay attention to delicious presentation — both the dishes themselves and the social media visuals, spiced up with notes of art and culinary aesthetics.
The kitchen also cares about the environment. The men are working to reduce waste in the restaurant. They recycle plastic, paper, cardboard, and glass. And they make candles from wine bottles: they cut off the upper part of the vessel, pour paraffin — and create a romantic atmosphere, inspired by the zero-waste concept.
In this way, the trio at Trip put their content into «neo-bistro.» Bistro serves a quick meal. Neo is not just an author’s cuisine, but something new, which has never been in Kaliningrad: fermentation, tapas, the fusion of Asia and France. Combined with an exclusive wine list and the promotion of non-waste consumption, it’s hard to describe it in any other way than as «neo».
